Hi, I am on list 3/4 and ok to try mozzarella, and feta...assuming goat cheese too, although i didn't specifically confirm this one with Matia. I keep going to do cheese section, read the ingredients, inspect the cheese and get confused and discouraged and just leave. This has been going for a month, shows how daring I am :) Can you please share some brands/types you tried and were ok with? Mainly feta cheese (packaging has slight juice in it, i don't know if it is preservatives?), mozzarella (they have presliced ones, i am assuming these are ok?, others say vinegar in ingredients), and goat milk cheese...i appreciate if you have some feedback to share.

I am not sure about feta. I think it is highly aged, isn't it? Therefore, it would not be appropriate for us.

I am list 3 plus some list 4 veggies. I eat a little goat feta. I dont think it bothers me? Some is more aged than others. Most brine is just salt. It will say if it has vinegar. Also at TJs and othe places you can get cryo-vac feta with no brine or vinegar. Ask dr. b. I think a little is ok on list 3/4. Especially if you can eat parmesan which is list 4? I have had a bit of goat feta for several months and do not notice a reaction? Some might be less aged than others. Maybe avoid the ones that say "aged over two months". I think even mild cheddar is "aged" a little bit??

I eat lots of goat cheese these days.  It has never bothered me, even early on with IC.  The best is to make a salad with whatever veggies you want, toast some sliced almonds in a pan and then put goat cheese on top and it melts a bit when it hits the almonds.  I find I don't even need dressing.  So good!

Now I remember she said on list 3 it was ok for me if it was "mild". Mild probably means it is less aged....
I sprinkle it on pasta and tomatoe/meat sauce. I sprinkle it in salads and on sauteed veggies. I have taken it out for a month because I cut all dairy for acne, sigh....Love me some goat cheese. Later.....

I have been using mozarella and sometimes porvolone with good results. Most mild white cheeses are ok for me not so with cheddar or parmesan or montery jack. I stick to mozarella in packages or shredded never in the water and have no problem. It is also very low in fat.

Thanks for all your responses. :) I am so happy to find out you incorporated feta and goat cheese without any problems. I can't wait to try them. I love goat cheese and grew up on feta so i really miss those two especially.

GREAT! I would still check with Dr. B before you eat two pounds of it LOL. It is really individual and I think for most (esp. if you are not dabbling in list 4) it is better to ask.

Yum yum yum yum yum. I love cheese. Yum yum yum yum. I LOVE goat cheese! I saw the title of this post and my mouth started watering and all I want to say is YUM!!!!!!!!!!! YUM! I can't WAIT to eat goat cheese! THE BEST thing do to with goat cheese my opinion is to pour it into a bowl, chop up some fresh garlic, add rosemary and thyme and whatever other fresh herbs you want, salt and pepper, and dip in a fresh baguette! YUM!
You can even buy some delicious goat cheese from whole foods, and its the same brand as I used to get in france I think it's just called chèvre and it's in a little pyramid and it's so delicious.
I just wanted to talk about cheese. I have been so starving lately since I cut out grains and have been eating like ten portions of veggies with each meal just to keep berries and other delicious looking things like cheese out my mouth. So... this post is really like a twisted food fantasy for me... thanks for letting me play it out!

Does the diet eve allow you to eat or make nut or pea cheese? I used to be a raw foodie...some of my favorites are nut cheese and nut tuna! One day maybe ;). Do we ever get to be normal again?

Carey you will be able to eat all foods again accept sugar and fungal foods (No peanut butter, no blue cheese, no mushrooms, no coconut (anti-fungal) and very limited soy). Probably planning to eat in Thai or other asian restaurants where they use a lot of sugar would be a once a month thing, rather than a daily or weekly thing. In the Bay Area where I live, a lot of the food is inspired by Italy/France so I will be in good shape for eating out LOL (but avoiding mushrooms, sigh). 
Peas are probably list 4. I think they also effect hormone production. You should look up pea flour. In my fairly extensive research about nutrient-dense foods, nuts should always be eaten in moderation and not as a replacement for nutrient dense foods (Fish, eggs, healthy meats, tubers, veggies, maybe some grains). I would rather eat a piece of raw milk aged cheddar. The real deal. But that is me :) It is just that I have seen many people get sick from veg and raw diets. My babysitter is vegan and now she has Ankylosing Spondylitis. Scary.

Thanks Mimi. Proud to say I have eaten fish twice on my trip. Very tough for me...feels like I am eating bunny :(. Wondering If dr. b will just let me eat fish? Do we have to eat every type of meat in her opinion?

I hate to tell you but I believe I have read that she feels it is absolutely necessary for healing to eat red meat in particular. It has to be hard when you have invested yourself into one philosophy about food. I was lucky with that because I already followed a more traditional foods diet.
