I have come to the realization that I do not tolerate any packaged food.  I tolerate brown rice, but not rice cakes.  I tolerate some potato but not potato chips, I can't do anything processed in any way.

I started making my own rice cakes.

I make 1 cup of brown rice and let it cool.

I mix it with an egg and olive oil.  I would say I mix most of it, but not all of the rice.

I make it into round patties and put in on a baking pan.

I bake it at 425 for 23-30 minutes.

I put REAL salt on it.

I put it in the toaster oven to make it crispy, and sometimes drizzle my fav. olive oil over the top

It ends up being a crispy treat

A battle worth fighting ♥

that isn't a bad thing that you have decided to do your body a favor and not give it any processed food. i know a pain in the but but in the long run you will be better off. it sounds good too if i could eat rice i would be excited .

Melissa~

You are sooo creative!  I would never think of doing this.  I would totally try it but I'm off the brown rice and olive oil right now.  I love anything crispy and crunchy, great idea!!!!
