HI! I took gluten out of my diet 7 weeks ago just to see if it helped. I am feeling much better but i also did a lot of other things at he same time so it is hard to tell. I know Matia has yeast free bread on the list 1. As of now, I am only eating rice bread to avoid gluten. I know I can ask her when I see her on May 25 but I was wondering what you guys think about me adding in a yeast free spelt bread?

Yeast free bread....spelt, kamut, rice is listed on list one. I think Matia would be OK with it. I did some research and copied this from a nutrition web site:
Spelt is similar to wheat in appearance. However, spelt has a tougher husk than wheat, which may help protect the nutrients in spelt. Spelt flour has a somewhat nuttier and slightly sweeter flavor than whole wheat flour. Spelt contains more protein than wheat, and the protein in spelt is easier to digest. This means that some people who are allergic to wheat may be able to tolerate spelt. Spelt has gluten, just like wheat, so spelt is not suitable for a gluten-free diet.
So there you have it....I guess it would be up to you to try it and see for yourself. If your symptoms get worse after 1-2 days you could stop it. Some food allergies show in 1-3 hours and others have a delayed reaction...up to 72 hours. If you decide to try it, eat a good size portion a couple times to allow your body to show an imune reaction. You can google spelt and there is lots of good info to read.

Before Matia, I was gluten free for a year and I think it helped me in so many ways except the bladder. When I did add in the yeast free kamut bread I didn't feel terrible, but didn't feel great either. For me, I think I have more energy when off gluten but I don't notice a huge impact on my bladder symptoms. Recently I have tried to go all grain free (only eating potatoes) and have noticed a slight improvement.
I believe that gluten should be eaten in moderation for even healthy people. I just think it complicates our digestion and bogs down the whole process, possibly helping the yeast to flourish. But for those of us who have intestinal damage and leaky gut, I believe cutting gluten out temporarily is a definite good thing to try. Because the diet is so restrictive, though, it is hard to only eat potatoes as starch and that is why I found myself going back to yeast free kamut bread for a time which, like I said, didn't seem to increase bladder symptoms, I just didn't notice much improvement during it. But that is me, might be different for others.

Thanks! I never noticed any issues that I could think of that were related to gluten. But I never fit the symptoms for yeast either except for the risk factors. I did the Atkins diet a while back (pre-IC) and I felt really great. Not sure if it was the low carbs,lack of suger, yeast reduction, or wheat reduction. II tried going gluten free as anexperiment to see if I felt better. I still don't know if it has helped. I am a little afraid to try but I don't want to eat all rice and potatoes either.
