Black Bean Brownies

One of my patients sent this in and wanted to share:) I recommend subbing in agave or maple syrup in place of the sugar. Otherwise they sound really tasty. If you want, you can even use raw cocoa powder instead of regular. Just make sure it is unsweetened.

BLACK BEAN BROWNIES

I often serve these with homemade ice cream, so delicious!

Ingredients:

  • 2 cups properly soaked and cooked black beans (soaked in spring water and lemon, lime or whey for at least 8 hours, washed, drained, then cooked for 8-12 hours in spring water, skimming top of scum, washed and drained again when beans are soft and fully cooked)
  • 3 eggs
  • 3 tablespoons oil
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3/4 cup sugar (or other sweetener equivalent, amount depends on taste and ingredient)
  • a pinch salt

These are just the basic ingredients, feel free to change them up to meet your tastes/dietary requirements. You can replace some/all of the oil with apple sauce for example.

Instructions:

Preheat oven to 350* F.

Pour drained beans into a blender, set on puree and blend until smooth. Add in the rest of the ingredients and continue blending until evenly mixed.

Pour bean mixture into a greased 8 by 8 pan. Bake in oven for 30 minutes, or until toothpick placed in the center comes out clean. You can use cup cake tin and cupcake liners to make “brownie bites” too! Let them cool and enjoy.

There are some things on list 4 and 5 I can tolerate... This one I cannot... I had these once made with the black bean flour and it sent me into a HORRID bladder flare... Just listen to your body and don't jump the gun... Remember, in these brownies you are eating A LOT more black beans than you would at a normal sitting of eating just regular black beans...
