Set oven to 400F
Line baking sheet with parchment paper

Mix together:
1 cup quick cook oats
1 cup whole  plain almonds
1/4 - 1/2 cup Fruit Sweet by Wax Orchard (concentrated fruit juice blend for baking and cooking) - you want to make sure that everything is
                                            mixed well together, but, that there is not too much Fruit Sweet that will run off  the mixture as it burns quickly
Press mixture all over parchment paper
Set timer for 5-7 minutes (all ovens are different)
Take out,  stir and flip over - you will see that the oats are browning on the bottom
Set timer for 5-7 minutes
Watch that the almonds are not getting dark
Remove from oven
Cool
Break into pieces
Add:  chopped dates, sugar free organic cherries or whatever fruit you can have and store it all in a sealed container

To serve:

Microwave Wax Orchard chocolate sauce and drizzle over some in a bowl.  Add a banana or whatever else you can have.

THINGS I KNOW FOR SURE:
This recipe is basically whatever you are allowed in your diet.
Make sure that you do not bake any of the fruit - it will burn.
And most important...if you have a bit of the mixture on the spoon and bite it off - you are going to burn your tongue!
You can shake the container to break up the pieces more and dance and get exercise to wear off the calories from eating it.

If you can make yourself pancakes with whatever flour... spelt, Pamelas, etc. try the following
Use a hand blender and take several hands of fresh spinach (fresh is key here, the frozen tastes awful!)  Add whatever liquid you can tolerate (almond milk, water, whatever) add just enough to puree the heck out of the spinach so you have a nice thickish liquid... you should not see leaves, but it should be pretty ground down.  Add this mixture to your pancake mixture, (subtracting from whatever liquid you would have used---does that make sense?)  If you are able to tolerate blueberries, add these to your pancakes ( I use thawed out trader joes wild organic blueberries since they are nice and small)
You will have "Incredible Hulk" pancakes. You can add as much spinach or as little as you want.  the key is to get the spianch/liquid mixture to a nice puree so you can add to your pancake mix.  It is very similar in idea to adding applesauce to cakes, cookies, etc to give them extra moisture without adding fat.  I did this last week with spinach to brownies and the brownies were so moist and my kids had no_idea_that_spinach_was_in_there!!!  Heh heh heh!!!  The blueberries in the pancakes totally mask the flavor of the spinach.  Serve pancakes with lots of butter and maybe a drop or two of agave if you are allowed... They are really good.  I make enough pancakes for a week and freeze so I don't have to puree spinach everymorning... But honestly, it does not take that long at all!

pancakes too with spinach or kale for my daughter and I, she loves them! I put 2 yellow squash, bunch of kale or spinach, 2 eggs and 2 whites, and enough spelt and pamela's mix to make a good batter in a blender. I cook them with butter, and eat with some butter. They are green pancakes, but taste awesome, and will get your kids used to eating green things ; )
