Zucchini/broccoli- muffins/bread List One idea

I just wanted to give a version on Nicole's yummy Zucchini muffins that I made to tolerate on list one.  I cant tolerate spelt, but I can use Brown Rice Flour.  

I took her recipe under veges section. I replaced spelt flour with brown rice flour.  I added broccoli into it as well.  

I like it a lot!

to say I used 3 eggs and I drizzle some olive oil (or butter you can do) on it before I eat them.

Well, its been about 40 minutes since I eat them and now I am burning and flaring....:(((((((((((.  I am thinking I am one of the unlucky few that can only tolerate brown rice and rice cakes, no flours.

Does list one allow baking pwd or soda?  I don't think so but I'm not sure since I am new.

you could have it if it was baked into something, but maybe not.  that would explain maybe why I had a flare..maybe its that and not the brown rice flour.

yes baking soda and baking powder is aloud in baking things. I can't have any flours yet either dont feel bad this is a hard one for some.I used to be able to eat those there very old recipies of mine. Sometimes I come up with things I have never even tried and will ask others to try them just because I know how to bake and cook. I miss grains terribly and read that sprouting them is better for your intestines so I am looking into growing my own grains and sprouting them. If this goes well I will buy the mill attachment for my juicer. I have almost tried every grain known to man kind.

I flare on all whole grain flours.  Brown rice bothers me a lot, so maybe that is your problem.  Also, broccoli bothers my bladder most of the time.  Eggs bother me too, if I eat them by themselves.  I do seem to tolerate them better in baked goods.  You could try each of the ingredients alone to see which one is bothering you.  I think the baking soda and baking powder are okay as long as they are baked into something.

Gosh..What do you eat on a daily basis?  I know for sure broccoli and zucchini are not the culprits cause I eat them by themselves a lot.  I do now think for some reason when I eat raw veges, any thing raw vege it makes my frequency worse.  I have a feeling its because my gut is not absorbing all those vitamins, so it is going straight to my bladder.  I will talk to Matia about it next week, but I am almost positive I need to give up most grains for a while.

This sounds good.  I have not baked anything yet.  I think I will try this tomorrow.  I was wondering if anyone has tried making bisquits with rice flour?  They would be good with chicken and gravy and they may travel well for work and trips.

It took me a while, but I finally got "clean" from all flours and all grains except brown rice and rice cakes.  I do not tolerate brown rice flour in a big way, and that was very disappointing for a while, especially because I had to let go of spelt, rice and kamut breads.  Sometimes it's just so hard to believe that these types of "health" foods cause my bladder urgency to go up, but now my husband reminds me that nothing should be surprising when it comes to how sensitive my bladder is, and that if there is anything questionable, that it's worth eliminating until we get this thing under control.So now I strictly stay away from all my questionable or definite irritants from the lists: grains, butter, olive oil, cheese, brussel sprouts, asparagus.  Sometimes I feel like I'm on List Zero and going further in the negative.

I also don't tolerate brown rice flour at all.  It's sooo hard because I really want to bake something and can't.  I haven't tried spelt or kamut because I don't do well on wheat.  This is really hard especially with the holidays and all the holiday treats everywhere.  I'm sorry to hear that you don't tolerate butter!  I've been staying away from olive oil and really miss it!!!

the only way you could bake something with out using olive oil or butter would be to save some fat from your chicken you can roast the chicken in a pan and then scrape the fat to use. As far as the grains I am just as clueless.

i think we should make a group for those of us who cant tolerate grains...LOLits sssoooo not fair....UGH!!!"the nograiners"........its soo tough eating the same thing over and over..esp those of us that LOVE food

yeah, I certainly LOVE food, its ironic how much I could love food but have  a disease that forces me to eat 8 things and thats it.  But, I have to stay positive..this is not forever!

I think i am going to attempt the bread making experiment this sat the 19 i will report my findings. I think i may try to buy a gluten free cookbook so i can learn from it. I know there are tricks there was this milet rice bread that only used water milet rice flour baking soda and baking powder. Now there has to be some sort of trick about this bread it was so soft like regular sandwich bread. The only problem was the types of grains used.
