Healthy Cheese Cake

My daughter had me pull out many recipes from my past the other day and I was looking for one in particular that I couldnt find. So, I recreated it from my memory. So, this is not precise at all, but most of my recipes arent anyway.

However we did it wor-it was so so good! Here it goes:

Put about one cup cottage cheese and one cup ricotta cheese (organic of course) in a bowl and just a little maple syrup to taste-maybe 1/3 cup and two raw egg whites and mix well. Then fold in a litte melted butter slowly so the egg whites don't curdle. In a separate bowl take either almond meal or cashew meal and pour in melted butter until it becomes the consistency of dough and mold into a pie crust at the bottom of a pie pan. Then pour in the ingredients in the first bowl and bake for about 15 minutes at 350. Then put in the fridge until you serve (about an hour).

It is sooo yummy and simple. Also, remids me a very nice soul went and posted many of the recipes that I have posted on the blogs through the years and placed them in the proper areas of the recipes so that they would be organized.
